BOSTON BAKED BEANS A LA MARIE 
2 1/2 c. great northern beans
1/4 lb. lean salt pork, cut in chunks
1 sm. onion, diced
1/2 c. dark molasses
2 tbsp. dry mustard
3 tbsp. brown sugar

Cover beans with cold water and soak overnight. Rinse beans well; cover with 2 inches water and bring to a boil. Lower heat and simmer until beans are tender but not mushy (about 20-30 minutes). Drain, reserving bean water.

Put beans in bean spot; add salt pork and onion. Mix together molasses, brown sugar, and dry mustard, and combine with beans in pot. Stir. Add reserved bean water and fresh water as necessary to cover beans. Cover beans pot and cook in 275 degree oven for 6-8 hours. Stir occasionally and add water if needed to prevent beans from drying out. Serve with brown bread and cole slaw.
