CHICKEN ADOBO 
1 c. native vinegar, can use regular vinegar
1 head crushed garlic
1/2 tsp. black pepper
1 bay leaf; optional
1 c. cut up chicken
2 tbsp. rock salt
1-4 tbsp. soy sauce (4 tbsp. is best)

In a saucepan combine vinegar, garlic, pepper, bay leaf, salt, and soy sauce. Add one cut up chicken. Let soak for at least 30 minutes (overnight is better). Add 1 1/2 to 2 cups water and simmer uncovered until tender. Strain sauce and set aside.

Brown garlic and chicken in oil. Return everything to saucepan. Cover and simmer until sauce thickens. (Use cornstarch to thicken if necessary.)
