PEAR PRESERVES 
12 quarts firm pears, peeled & sliced thin
5 lbs. sugar

Pour sugar over pears. Let set overnight. Cook slow 6 to 7 hours until pear slices are clear with red tint and juice is thick. Place in jars and seal.

Best pear preserves ever! Just the way my mother used to make them. Just thinking about hot homemade buttered biscuits with these preserves makes my mouth water! Divide the pear mixture in more pans and it cooks much faster, but since it cooks faster , it will scorch faster too. You don't want that to happen! Stir tenderly quite often.
