OATMEAL PANCAKES 
1 c. oats
1 c. milk
2 eggs, beaten
2 tbsp. oil
1 tbsp. brown sugar
1/2 c. flour, whole wheat
1 tsp. baking powder
1/4 tsp. salt

Mix oats and milk in a bowl. Microwave for a couple of minutes until oats absorb milk. Mix eggs, oil, and brown sugar. Add and mix in dry ingredients. Then add in oat/milk mixture and mix. Bake pancakes on hot, lightly oiled griddle; turn when bubbly. Makes 10-12 four inch pancakes. Serve with your favorite topping.

Optional method that is easier but not quite as good; dump all ingredients in a bowl and mix the night before.

Since microwave ovens vary in power, you may need to adjust your cooking time.
