HAM AND SCALLOPED POTATOES 
2 1/2 c. diced ham
8 medium potatoes, peeled and thinly sliced
2 onions, thinly sliced
1 green pepper, chopped fine
Salt and pepper to taste
1/2 c. Cheddar cheese, grated
1 (10 oz.) can Cheddar cheese soup
1/2 tsp. dry mustard, mixed with 1 tsp. cold water (optional, may be mixed with soup)

Layer ham, onions, potatoes, and green pepper in crock pot. Sprinkle 1/2 cup Cheddar cheese over dry ingredients. Pour soup mixture over all. Cover and cook on low, 8-10 hours or cook on high 4 hours.
