SLICED LEMON PIE 
9" pastry shell

FILLING:

1 1/2 c. sugar
2 tbsp. flour
1/8 tsp. salt
1/4 c. soft butter
3 eggs (reserve 1 tbsp. white)
1 tsp. grated lemon rind
1 lemon, peeled & sliced
1/2 c. water

Mix together flour, sugar, salt. Add butter, eggs, lemon rind, lemon slices and water. Pour into pie shell. Put on top crust. Brush on reserved egg white. Sprinkle with 1 tablespoon of sugar and dust with cinnamon. Bake at 350 degrees for 30 to 35 minutes.
