STEPHANIE'S BEST ORANGE
CHEESECAKE
 
1 2/3 c. graham cracker crumbs
1/4 c. sugar
1/4 c. melted butter

2 tbsp. grated orange rind 2 tsp. orange extract 1 3/4 c. sugar 3 tbsp. flour, all-purpose 1/4 tsp. salt 1/4 tsp. vanilla 5 eggs 1/2 c. whipped cream or Cool Whip

Combine first 3 ingredients (crust), mix well and press into bottom of 10 inch springform pan. Bake at 375 degrees for 8 minutes. Cool.

Beat cream cheese until fluffy. Stir in sugar, flour, salt and vanilla. Add eggs, 1 at a time, beating well after each. Fold in whipped cream. Spread over crust and bake at 400 degrees for 8 minutes then reduce heat to 200 degrees and bake 90 minutes. Cool on wire rack and chill.
