FRESH BROCCOLI WITH MOCK HOLLANDAISE | |
Enough water to cover broccoli 2 tsp. salt Wash 1 head broccoli. Split large stem into fourths, but do not cut through head. Submerge broccoli in boiling water. over high heat, quickly return to boiling. Reduce heat and cook gently, uncovered, just until stems are tender (7-10 minutes). Remove from hot water immediately. Cut into serving pieces and arrange in oblong dish with heads at each end and stems in the center. Pour mock hollandaise over stems. MOCK HOLLANDAISE: 2 tbsp. butter 2 tbsp. flour 1 tbsp. sugar 1/4 tsp. salt 1 c. water 2 tbsp. vinegar Cook until thickened. Cool slightly. 2 egg yolks, beaten or 1 whole egg, beaten Blend. Heat briefly before pouring over vegetables, but do not boil. |
