FRENCH PORK PIE | |
Crust for a 2 crust 9 inch pie 1 3/4 lbs. lean fresh pork (preferably fresh ham) 2 tsp. salt 1 tsp. pepper 1/2 tsp. ground cloves 1 med. onion, chopped Put pork and seasonings and onion in a large frying pan and cover with water. Cook until pork is done and a little water remains. Roll out bottom crust and put cooked pork on top of crust in 9 inch pie plate. Sprinkle with a little flour. Put top crust on and bake at 375 degrees until crust is golden. Put a few knife slashes in crust top. This pie is used as the main dish and served with vegetables and salad. This recipe was used by my Mother (in upstate NY) for our New Years dinner. It was also used by my relatives in nearby Quebec for their New Years celebration. |
