EMERY'S RANCH CHICKEN | |
2 lb. chicken, diced 2 family size cans cream of chicken soup 1 sm. can chicken broth 1 lb. cheese, shredded, any kind salsa and green chilies 10 ct. pkg. flour tortillas Stew chicken until tender, dice chicken. Add soup and broth, simmer until creamy. In a 9 by 13 in. casserole dish cover bottom with mixture. Place 2 tortillas on top, if they are slightly overlapping it's okay. Next start layering with tortillas, chicken, then cheese. Repeat until tortillas are gone. End with sauce, leave off cheese and bake 25 min. at 350°F. Top with cheese and let stand 10 minutes, cut and serve. To add a bite you can add green chilies when you simmer. |
