DIABETIC COOKIES 
1/4 c. plus 2 tbsp. water
1/3 c. oil
2 c. seedless raisins
2 tsp. cinnamon
1/2 tsp. nutmeg
1 1/2 tsp. salt
2 tsp. liquid sweetener
2 eggs, beaten
2 c. flour
1 tsp. baking powder
1/3 c. nuts (optional)
1 tsp. baking soda

Combine 1/4 cup water, raisins, oil, cinnamon and nutmeg in saucepan. Boil three minutes. Let cool. Mix together salt and soda. Add liquid sweetener and remaining water. Add to eggs. Stir egg mixture into cooled mixture. Mix together flour and baking powder. Add flour mixture to other ingredients and mix well. Add nuts if desired. Drop from spoon onto greased cookie sheet. Bake at 375 degrees until lightly browned. Yields: 2 1/2 dozen.
