MY FAVORITE OATMEAL COOKIES 
1 c. butter
1 c. brown sugar
1 c. sugar
1 tsp. vanilla
4 egg whites (or egg substitute equivalent to 2 eggs)
1 1/4 c. flour
1 tsp. baking soda
1 tsp. cinnamon
3 c. quick cooking oats

Cream together first five ingredients. Sift together flour, baking soda and cinnamon. Add to sugar mixture. Stir in oats, mix well and drop by teaspoonful onto a greased cookie sheet. Bake at 350 degrees for 10 minutes. Yield: 4 to 5 dozen.
