BUDGET HOT DOG CASSEROLE
There are many forms of this recipe, but this simplified version has always been a family favorite for a hearty winter meal. A favorite among kids.

1 lb. skinless hot dogs, sliced up thin
1 (28 oz.) can baked beans
1 (7.5 oz.) can biscuits
1 (8 oz.) pkg. shredded cheddar cheese (about 2 cups)
black pepper (optional)

Preheat oven to 400°F. In a medium saucepan, add baked beans and sliced hot dogs, heat through then simmer and stir occasionally for 5 minutes. Transfer to a suitable casserole dish (2 1/2 quart Corningware square, 9x13-inch - anything that fits). Separate your biscuits then arrange over the beans. Bake for around 20 to 25 minutes until the biscuits are browned on top. Remove, top with cheese (use less if desired), return to oven for 5 minutes until cheese is melted. Serve with black pepper if desired.

Serves 4 (or more).
