CHICKEN CASSEROLE 
5 to 6 chicken breast or thighs
Spicy mustard
2 pkgs. stir fry mix
1 lg. onion, sliced
Soy sauce

Place chicken in baking dish, brush with mustard and place onion on top. Onion should be sliced very thin.

Mix together 1 tablespoon mustard, 3 or 4 splashes of soy sauce and 1 1/2 cups of water. Pour over chicken, salt and pepper to taste.

Micro-cover chicken with plastic wrap and cook on high for 10 minutes at a time stirring each time and checking doneness of chicken, approximately 40 minutes.

Oven - cover with aluminum foil and bake for 35 to 40 minutes or until chicken is done. Serve over rice.
