PEACH PIE 
1/2 c. sugar
1/4 c. brown sugar
5 c. sliced peaches
3 tbsp. cornstarch
1/4 tsp. nutmeg
1/4 tsp. cinnamon
1/8 tsp. salt
1 tbsp. lemon juice
Butter
Pie crust for 9" pie (2 crust)

Mix sugars. Sprinkle over sliced peaches. Let stand 1 hour. Drain juice. Blend cornstarch and spices with juice and cook until thick and clear. Add lemon juice and fruit. Fill pie shell. Dot with butter. Bake at 450 degrees for 10 minutes then at 350 degrees for 30-35 minutes.
