JAPANESE FRUIT CAKE | |
3 c. flour 1 tbsp. baking powder 4 eggs 2 c. sugar 1 c. butter 1 c. sweet milk lso needed: 1 lb. white and 1 lb. dark raisins 2 c. chopped nuts 1 tsp. cloves 1 tsp. allspice 1 tsp. cinnamon Mix and then divide dough in 2 parts. To one part of dough add 1 pound white raisins and 1 cup chopped nuts. To the other part of dough add 1 pound dark raisins, 1 cup chopped nuts, 1 teaspoon of cloves, 1 teaspoon allspice and 1 teaspoon cinnamon. Grease and flour cake pans. Makes 4 or 6 layers. Bake in moderate (350 degree) oven. FILLING: 2 grated lemons 1 grated fresh coconut 1 tbsp. cornstarch 2 c. sugar 1 c. hot water Cook until thick, then stack cake layers one dark and one light until all are stacked. Outside of layers will be plain so I make an icing with powdered sugar and cover cake. |
