MEXICAN CASSEROLE 
1 lb. lean ground beef
1/2 c. chopped onion
1/2 c. chopped red pepper
1 can whole kernel corn
1 pkg. Jiffy cornbread mix
1 1/2 c. grated cheese
1/2 tsp. red pepper
1/2 tsp. salt
1/2 tsp. pepper

Brown ground beef, onion, pepper. Drain fat. Add corn. Place in greased casserole dish. Mix cornbread according to package. Cover with cheese. Bake 20-25 minutes until cornbread is golden brown.
