MICROWAVE FUDGE 
1 lb. butter (butter can only be used if its 100 calories/tbsp.)
1 lb. Velveeta
1 1/2 c. cocoa (6 oz. by weight)
1/2 c. Karo
4 lb. powdered sugar
1 lb. pecans, broken and cleaned
1/4 c. vanilla (4 tbsp.)

Place first 4 ingredients in large microwavable mixing bowl (4 to 6 quarts). Heat in microwave on High for about 6 minutes until butter and Velveeta are well melted. Stir thoroughly, then stir powdered sugar in two or three stages. Heat again for 6 more minutes. Add any sugar not mixed and heat 3 to 5 minutes until bubbly. Stir thoroughly. Add vanilla and pecans and stir until thoroughly mixed. Pour into two 10 x 14-inch pans that are very lightly greased with butter. Handle hot mixture very carefully.

Since microwave ovens vary in power, you may need to adjust your cooking time.
