MEAT AND CARROTS TZIMMES 
3 tsp. salt
1/2 tsp. fresh grated pepper
3 lbs. beef (top ribs or brisket)
2 onions, chopped
2 tbsp. flour
3 c. boiling water
4 tbsp. honey
8 carrots, quartered
2 sweet potatoes, peeled and quartered

Mix together 2 teaspoons of the salt and pepper. Rub into beef thoroughly. Place meat in Dutch oven with onions. Brown slowly over low heat. Add flour, mixing well. Add water, stirring until boiling point. Cover and cook over low heat for 1 hour. Add honey and mix. Add carrots, sweet potatoes, and remaining salt. Cover. Bake at 375 degrees for 1 1/2 hours or until beef is tender. Remove cover last 15 minutes. Serves 6.
