M.'S CARROT CAKE | |
3 c. flour 2 tsp. baking powder 1 tsp. cinnamon 1 1/4 c. oil 3 c. finely shredded carrots (1 lb.) 2 tsp. baking soda 1 tsp. salt 1 1/2 c. sugar 4 eggs 1 c. chopped walnuts Sift flour, baking soda, baking powder, salt and cinnamon together; set aside. Beat together sugar and oil. Gradually beat in eggs, then flour mixture. Stir in carrots and nuts. Oil a 10" tube pan. Pour in batter and tap on counter to release air bubbles. Bake at 350 degrees for 50 to 60 minutes. Serve with Cream Cheese Icing. CREAM CHEESE ICING: 8 oz. cream cheese 6 tbsp. sweet butter, softened 1 tsp. vanilla 2 1/2 c. confectioners sugar Combine all ingredients together and beat until smooth. |
