Vegetable oil spray
2 c. diced apple, peeled or unpeeled
3/4 c. sugar
1/3 c. acceptable vegetable oil
1 tsp. vanilla
1 egg substitute equivalent to 1 egg
1 1/2 c. unsifted all purpose flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 1/2 tsp. pumpkin pie spice
1/2 c. raisins

Preheat oven to 350 degrees. Lightly spray an 8 inch square cake pan with vegetable oil.

Combine apples and sugar in a bowl and let stand 10 minutes. Add oil, vanilla, and egg substitute. Stir to mix well.

In another bowl, combine dry ingredients and mix thoroughly. Add ingredients and mix thoroughly. Add to apple mixture and stir to mix well. Add raisins and stir to mix well. Spread batter evenly into prepared pan. Bake 35-40 minutes. Serves 9.
