SQUASH CASSEROLE 
1 1/2 lbs. squash
1/2 pt. sour cream
1 can cream of chicken soup
1 onion, chopped
2 carrots, grated
1 sm. jar pimento
Cornbread stuffing mix

Cook, drain and season squash. Mix with sour cream and add cream of chicken soup, onions, carrots and pimento. Place in casserole with alternate layers of stuffing mix. Cover with stuffing mix. Bake at 350 degrees for about 25 minutes.
