CEVICHE 
2 lbs. trout, cut into 1" pieces
1 1/2 c. lime juice

Marinate fish in lime juice 4 hours. Stir now and then to be sure all fish is coated. In a separate bowl mix together:

1/2 c. lime juice
1 tsp. salt
1/4 tsp. oregano
1/4 tsp. cumin
1/2 tsp. white pepper
1/4 tsp. tabasco
3 tbsp. olive oil
10 green onions, chopped
3 lg. tomatoes, chopped
1/4 c. green olives, sliced
3 tbsp. pickled jalapenos, chopped
1/4 c. cilantro, chopped

Drain fish in colander and add to marinade, mix well, cover and refrigerate overnight. Approximately 1 hour before serving, cut 2 avocados into cubes and add to fish, mix well.

Serve with saltine crackers or tortilla chips.
