WILTED SPINACH SALAD 
1 lb. fresh spinach
1/2 c. chopped green onion
5 slices bacon, diced
2 tbsp. wine vinegar
Freshly ground pepper
1 tbsp. lemon juice
1 tsp. sugar
1/2 tsp. salt
1 hard-cooked egg, coarsely chopped

Wash spinach and discard stems. Dry and tear into bite-sized pieces. Place in bowl, add onion, grind pepper to taste, and chill. When ready to serve, fry bacon in large skillet until crisp; do not drain. Add vinegar, lemon juice, sugar, and salt. Add spinach and toss until leaves are coated with mixture and slightly wilted. Garnish with egg and serve directly from skillet.
