ZUCCHINI FUDGE CAKE | |
1/2 c. butter, softened 1/2 c. vegetable oil 1 3/4 c. sugar 2 eggs 1 tsp. vanilla 1/2 c. buttermilk 2 1/2 c. flour 1/2 c. cocoa 1 tsp. baking powder 1/2 tsp. salt 1/2 tsp. cinnamon 1/2 tsp. cloves 1/3 c. chopped pecans 2 c. finely diced unpeeled zucchini TOPPING: 1/2 c. chocolate chips 3/4 c. chopped pecans When using large zucchini, peel and remove seeds before cutting or grating. Lightly grease and flour 9x13 inch pan. Preheat oven to 325 degrees. Cream butter with oil and sugar. Slowly beat in eggs, vanilla and buttermilk. In a separate bowl, combine flour with cocoa, soda, baking powder, salt, cinnamon and cloves. Slowly beat this into the creamed mixture. Add the 1/3 cup chopped nuts and zucchini, blending in well. Pour batter into pan. Sprinkle with 1/2 cup chocolate chips and 3/4 cup chopped nuts on top and bake for 40 to 45 minutes. Cut into squares to serve. 320 calories per piece. |
