MIXED VEGETABLE CASSEROLE 
1 can shoepeg corn
1 can French style string beans
1 can sliced water chestnuts, chopped
1 can celery soup
1/2 c. grated cheese
1/2 c. chopped onion
1/2 c. chopped bell pepper
1/2 c. chopped celery
2 oz. (4 tbsp.) sour cream
1/2 box cheese Ritz crackers
1/2 stick butter

Drain first 3 ingredients, then add all others except crackers and butter. Pour into lightly greased casserole dish. Crumble cheese crackers over this and pour melted butter over crackers. Bake at 350 degrees for 35 minutes.
