BEEF ROLL - UPS 
1 1/2 lbs. round steak, cut in pieces
4 slices bacon, cut in 2 inch pieces
1 lg. onion, chopped fine
3 tbsp. shortening or drippings

On each piece of meat, place piece of bacon and 1/2 teaspoon of onion grated or chopped fine. Season with salt and pepper. Roll up and fasten with toothpicks. Brown thoroughly in a Dutch oven in the drippings. Cover completely with water. Cook about 2 hours over low flame until tender. Season with salt and pepper. Thicken gravy with 1 1/2 tablespoons cornstarch mixed with 2 tablespoons cold water, mushrooms may be added to gravy.
