MANICOTTI 
1 lb. Mozzarella cheese
1/2 lb. ground beef
1/2 lb. bulk Italian sausage
1/4 c. chopped onion
2 eggs
1/4 c. grated Parmesan cheese
1/4 tsp. salt
20 cooked manicotti shells
1 can mushrooms, drained
2 c. of your favorite tomato sauce

Brown meat and onion. Beat eggs, stir in cheese, salt, Parmesan cheese and mushrooms. Add to meat mixture. Stuff manicotti shells and bake in oven that has not been preheated for 20 minutes at 350 degrees.

SAUCE:

2 garlic cloves
1 tbsp. olive oil
1 (8 oz.) can tomato sauce
1 (6 oz.) can tomato paste
1 1/2 c. water
1 c. diced tomatoes
1 tbsp. Parmesan cheese
1 tsp. sugar
1/2 tsp. salt
2 tsp. oregano
2 tbsp. butter
1/2 tsp. basil
1/8 tsp. thyme
1/8 tsp. celery salt
1/8 tsp. dried tarragon

Saute garlic in oil. Add remaining ingredients and bring to a boil. Let simmer 2 to 3 hours.
