BANANA YOGURT WALNUT LOAF 
2/3 c. butter
1 1/3 c. sugar
Egg beaters to equal 2 eggs or 4 egg whites
1 1/2 c. mashed banana
2 3/4 c. flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1/2 c. plain yogurt
1 c. walnuts (opt.)

Cream wet ingredients. Stir and add dry ingredients alternating with yogurt. Pour into greased and floured pans. Bake at 325 to 350 degrees for 1 hour. Makes 2 standard size loaves. Yields: 20 slices.
