CAJUN CAKE 
2 c. flour
1 1/2 tsp. baking soda
2 eggs
1 1/2 c. sugar
pinch of salt
2 c. crushed pineapple (large can)

Sift dry ingredients into a mixing bowl. Mix in the eggs and pineapple. Grease a 9 x 13 cake pan with oil or spray with Pam.

Bake at 300°F for 40 minutes.

Icing:

1 stick butter
1 c. sugar
1 c. flake coconut
1 small c. Pet milk
1/2 tsp. vanilla
1 c. chopped pecans or walnuts

Combine butter, milk and sugar. Boil slowly for 5 to 6 minutes. Remove from heat. Stir in vanilla, coconut and nuts. Leave cake in pan. Pour icing over hot cake.
