WHITE WEDDING CAKE 
5 1/4 cups sifted cake flour
6 tsp. baking powder
2 tsp. salt
2 cups white sugar
8 egg whites
1 cups white sugar
1 cup shortening
2 cups milk
1 1/2 tsp almond extract or flavor of choice
1 tsp clear vanilla
2 tsp vanilla instant pudding powder

Sift together flour, 2 cups sugar, salt, baking powder, and vanilla pudding. Beat egg whites in another bowl until fluffy and mix in 1 cup sugar (keep cold)!!!

Put 1 cup shortening in a large bowl. Sift in dry ingredients. Add 1 1/2 cups milk and extracts. Mix for 2 minutes, add remaining milk and egg whites. Mix one minute more. Pour into parchment lined pans and bake. ** Time depends on pan size.

Makes one 18 inch round or two 10 inch round layers.

Bake for 45 minutes at 325°F.
