CHICKEN BREAST ITALIAN 
4 chicken breasts, halved & skinned & boned
2 pkgs. Mozzarella cheese (8 oz.)
1/2 tsp. prepared mustard
3 red ripe tomatoes, skinned & squeezed

SAUCE MIX:

3 to 4 green onions
1/2 lb. mushrooms
2 to 4 tomatoes, skinned, squeezed & seeded
1/2 c. olive oil
1/2 c. all-purpose flour
1/2 c. white wine

Cook chicken 1/2 hour. Cool slightly. Skin and bone chicken. Slit chicken breast. Stuff with first 3 ingredients. Brown mushrooms and onions in olive oil. Add tomatoes and wine. Simmer for approximately 30 minutes or until tender. Add salt and pepper to taste. Garnish with parsley.
