MAMIE'S COQ AU VIN | |
2 pkg. chicken (legs & thighs) 4 slices bacon, cut up into 1" pieces 1 sm. can mushroom, drained or fresh 1 lg. onion, sliced 2 bay leaf 1 tsp. thyme 1 bottle burgundy wine Cook bacon in large pan. Remove. In same pan saute mushrooms and onions until onions are transparent. Remove. Brown chicken (you may need to add some butter). Put everything in a big pot. Pour bottle of wine over chicken, add bay leaves and thyme. Cook on stove at very low heat for 3 hours. Remove bay leaves. Refrigerate overnight. Skim off congealed fat. Reheat and you have a delicious meal. |

Tried Mamie's as it is simple and quick and turned out to be tasty. My radar went up when I read 1 bottle of burgundy wine, however. I did follow the recipe exactly and while the taste was pleasing the appearance of the chicken due to the burgundy was not to my liking. I will make it again using a light white wine. The cook time was too long for legs and thighs, especially since it is to be cooled, skimmed of congealed fat. Then it would be reheated prior to serving. The meat was already coming off the bone at the recommended 3 hours.
