COQ AU VIN 
3 tbsp. butter
3 1/2 lb. cut up fryer chicken
1 tsp. salt
1/8 tsp. pepper
1/2 lb. sm. white onions (canned sm. onions)
2 (7 oz.) cans mushrooms
1/2 c. sliced onions
1 clove garlic, minced
2 tbsp. flour
3 sprigs parsley
1/2 bay leaf
1/8 tsp. thyme
2 c. wine

Saute fryer in butter until golden brown. Sprinkle with salt and pepper. Add onions and mushrooms, cover and simmer 15 minutes or until partly tender and golden. Pour off all but 2 tablespoons fat. Add sliced onions and garlic, simmer 1 or 2 minutes. Stir in flour slowly, add wine, stirring until thickened. Sprinkle on parsley, thyme and bay leaf. Bake, covered 1 1/2 hours at 350 degrees.
