MAKE AHEAD LASAGNA OR DON'T BOIL
THE NOODLES
 
1/2 lb. lasagna noodles.
28-32 oz. jar Classico tomato and basil, or your favorite spaghetti sauce
8 oz. shredded Mozzarella cheese
Grated Parmesan cheese
16 oz. low fat cottage cheese
Cut up or sliced mushrooms and green peppers (or other toppings, according to
taste)

In a 13x9x2 baking pan, spread a layer of spaghetti sauce. Then press 1/3 of the lasagna noodles (usually about 3) into the sauce. Spread some cottage cheese on top; then Mozzarella cheese; then Parmesan. Cover with more of the sauce. Repeat process until all ingredients are gone, saving sauce to pour over top and some Mozzarella and Parmesan for last.
