SALAD MIMOSA 
1/4 c. olive oil
1 tbsp. wine vinegar
1/2 tsp. salt
Dash Pepper
1/2 clove garlic, finely minced
2 qt. crisp salad greens
2 hard cooked eggs, finely chopped

Combine oil, vinegar, salt, pepper and garlic in a jar with a tight lid and shake vigorously. Arrange greens in a salad bowl, add dressing and toss well. Sprinkle with chopped egg.

Makes 6 servings.
