1 c. pitted whole dates, snipped 1/4 c. granulated sugar In small saucepan, combine dates, 1 cup water, 1/4 cup sugar, 1/8 teaspoon salt. Bring to boil. Cook and stir over low heat until thick, about 4 minutes. Remove from heat; cool. 3 eggs 1/2 c. granulated sugar 1 c. flour 1 tsp. baking powder 1/2 tsp. allspice 3/4 c. chopped walnuts 1 recipe Cream Cheese Filling Beat eggs at high speed for 5 minutes. In another bowl gradually beat in 1/2 cup sugar. Stir flour, baking powder, 1/2 teaspoon salt and allspice. Fold into egg mixture. Spread in greased and floured 15"x10"x1" jelly roll pan. Top with walnuts. Bake at 375 degrees for 12 to 15 minutes. Turn onto towel sprinkled with a little powdered sugar. Roll up cake and tower together and cool. Very carefully unroll and spread with Cream Cheese Filling. CREAM CHEESE FILLING: Beat together 6 ounce package cream cheese, 4 tablespoons butter and 1/2 teaspoon vanilla. Beat in 1 cup sifted powdered sugar. Re-roll cake and chill. |
