CHILI 
4 clove garlic, minced
1 lg. white onion, diced
2 lg. green peppers, diced
2 tbsp. olive oil
1 lb. lean ground beef
2 cans DelMonte Cajun stewed tomatoes
1 can (8 oz.) tomato sauce
2 heaping tbsp. chili powder
1 heaping tsp. cumin
3 tsp. salt
2 cans Stewarts dark red kidney beans
1 can (4 oz.) mushrooms
Generous dash cayenne

In large kettle saute garlic, onion and green pepper for approximately 5 minutes. Saute ground beef until lightly browned. Add to kettle. Mix in tomatoes and tomato sauce. Add chili powder, cumin and salt. Cover and simmer 30 minutes.

Add undrained kidney beans and drained mushrooms and cayenne. Simmer uncovered 30 minutes. Serve with sour cream and/or fresh grated Parmesan cheese.
