NORWEGIAN PEA SOUP 
1 pkg. (1 lb.) split green peas
2 qt. boiling water
3/4 lb. lean salt pork in 1 piece
1 lg. carrot, pared & diced
1 lg. stalk celery, diced (include tops)
5 green onions, trimmed & sliced (include tops)
2 tsp. salt (will vary according to salt pork)
1/4 tsp. freshly ground black pepper

Sort peas, rinse, place in a large heavy kettle; add boiling water and salt pork. Set over moderate heat; cover, let bubble gently, 1 1/2 hours.

Add carrot, celery, green onions, salt and pepper. Simmer 30 minutes. Uncover and simmer very slowly 1 to 1 1/2 hours until thick.

NOTE: This recipe can be made in a crock pot allowing to simmer several hours on low. Serve with buttery slices of cracked wheat bread or caraway. 6 servings.
