Mix sharp cheese and mild cheese. Grind together with one small onion and 1 can or jar of pimentos (small).

DRESSING FOR CHEESE MIX:

3 eggs, well beaten
3/4 c. sugar
1 heaping tsp. dry mustard
8 tbsp. vinegar
1/2 stick butter

Cook, stirring constantly, until bubbly. Pour into cheese (Colby Long Horn mild cheese is best - I'd buy less than 1/2 pound of cheese).
