BANANA COCONUT LOAF 
1/3 c. shortening
2/3 c. sugar
2 eggs
1 c. mashed bananas pulp mixed with juice and rind of 1 lemon
1 3/4 c. flour
2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. baking soda
1 c. toasted coconut

Cream shortening and sugar. Add eggs, one at a time and beat. Add mashed banana and lemon to mixture. Sift flour, baking powder, soda and salt and add to batter, fold in coconut. Bake in 5 x 9 inch oiled loaf pan for 45-60 minutes at 350 degrees.
