LEMON - BUTTERMILK CAKE | |
1 c. buttermilk 1 1/2 c. shortening 2 1/2 c. sugar 3 1/2 c. all-purpose flour 4 eggs 1/2 tsp. baking soda 1 tbsp. hot water 2 tbsp. lemon extract Cream shortening. Add sugar, and cream thoroughly. Add 1 egg at a time, beating well after each addition. Add soda to hot water and mix with buttermilk. Add buttermilk and flour alternately, beat well. Add lemon extract last. Bake at 325 degrees for 1 1/2 hours. GLAZE: 2 c. powdered sugar 1/2 tsp. lemon rind (grated) 1/2 tsp. vanilla 2 tbsp. milk Stir together sifted powdered sugar, lemon peel and vanilla. Stir in milk to make glaze of spreading consistency. |
