4 c. apples, cored
1 1/2 c. sugar
1 1/2 c. salad oil
2 tsp. vanilla
2 tsp. cinnamon
1 tsp. salt
2 eggs, well beaten
2 c. flour
2 tsp. baking soda
1 c. nuts (opt.)

Dice apples (not too finely) and mix with sugar. Add oil, vanilla, cinnamon, salt and eggs. Mix flour and baking soda. Add to apple mixture. Add nuts if desired. Mix well.

Bake in greased and floured 9"x13" pan at 350 degrees for 1 hour or until done. Delicious.

Serve with whipped cream or sprinkle powdered sugar on top and eat plain. This is a delicious old fashioned homemade apple cake.
