FEATHERY GINGERBREAD 
1 1/2 c. flour
1/2 tsp. salt
1/2 tsp. baking powder
1/2 tsp. baking soda
3/4 tsp. ginger
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/2 c. boiling water
1/2 c. fat (lard)
1/2 c. brown sugar
1/2 c. molasses
1 egg

Preheat oven to 375 degrees for shiny pan or 350 degrees for dark metal or glass pan. Cut a piece of waxed paper for pan lining. Sift together first 7 ingredients, set aside. In a bowl combine water and fat Add sugar, molasses and egg. Add dry ingredients. Mix until smooth. Pour into square pan. Bake 35-40 minutes or until done.
