CARROT NUT BREAD 
2 c. sugar
1 1/3 c. oil
4 eggs
3 c. flour
2 tsp. baking powder
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
3 c. grated raw carrots
1 tsp. vanilla
1 c. chopped pecans
1 c. raisins (scalded and cooled)

Mix together sugar and oil with mixer. Then add eggs, one at a time, flour, baking powder, soda, cinnamon and salt. Then add carrots, vanilla, pecans and raisins.

Pour dough in two bread pans and bake at 350 degrees for 1 hour. This is also nice baked in soup cans for round slices. Fill cans about 1/2 full.
