ZUCCHINI SLAW 
3 med. zucchini, approximately 8 oz.
3 med. yellow squash
1 sm. red pepper
1/4 c. salad oil
3 tbsp. cider vinegar
2 tbsp. mayonnaise
1 1/2 tsp. pepper
1 tsp. salt (scant)

Cut vegetables into matchstick size strips, set aside. In large bowl beat salad oil, vinegar, mayonnaise, salt, sugar and pepper until mixed. Add vegetables and toss with rubber spatula to mix well. Cover and refrigerate for at least 2 hours.
