TUNA CAKES | |
1 c. shredded zucchini 2 tbsp. chopped onion 1/2 tsp. minced garlic clove 12 oz. tuna, packed in water 2 eggs 2/3 c. oatmeal ground in dry blender to make fine 1/4 tsp. salt 1/4 tsp. pepper Saute zucchini, onion and garlic in Pam about 5 minutes. Mix with remaining ingredients until blended. Form into 8 patties and brown in Pam in large skillet over medium heat, about 3 minutes per side. Serve with lemon or horseradish dip. (Weigh 4 ounce serving.) Serve with 1 cup salad. Single serving = 4 ounces protein, 1 cup salad. |
