TABOOLEH SALAD 
1 c. cracked wheat (bulgar wheat)
2 lg. bunches parsley
2 lg. tomatoes
2-3 bunches green onions
Juice of 2-3 lemons
1/2 c. olive oil
Salt to taste (optional)

Soak wheat at least 1 hour. Chop onion, parsley, and tomatoes very fine. Drain wheat and add; add lemon juice and olive oil. Mix well, let marinate 1 hour in refrigerator. Serves 6.
