CHEESE BALLS 
1/2 c. water
1/8 tsp. salt
Dash of nutmeg
2 tbsp. butter
1/2 c. flour
2 eggs
1/3 c. shredded Swiss cheese
1 c. sliced almonds
Salad oil for deep frying

Place water, salt, nutmeg, and butter in 2 quart saucepan. Bring to full boil over high heat. Add flour all at once. Remove from heat. Stir mixture until it forms a ball and leaves sides of pan. Beat in eggs, one at a time, until mixture is smooth and shiny. Add cheese and stir until blended. Drop mixture by teaspoonfuls into shallow pan with almonds. Roll to coat evenly and shape into 3/4 inch ball. Let stand 15 minutes. Heat oil to 370 degrees. Fry balls a few at a time until brown on all sides. Serve hot.
