2 c. cooked sweet potato
1 tbsp. melted butter
1/2 tsp. salt
1/2 tsp. vanilla
3 eggs, separated
1/2 c. white sugar
1 c. milk
2 - 9 in. unbaked pie shells

Mash cooked sweet potato. Beat together potato and egg yolks until light and fluffy. Add sugar, butter, salt, milk and vanilla. Mix well. Bake at 350 degrees 40 minutes or until set.

This recipe will make two 9 inch pies or one deep dish pie.
